Ingredients

  • 2 Sweet Potatoes, peeled and chopped
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn, fresh or frozen
  • 1 Avocado
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Spices (Cumin and Smoked Paprika, to taste)
  • Lime Juice, to taste (optional)
  • Fresh Cilantro or Feta Cheese for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and chopping them into bite-sized pieces. Toss with olive oil, salt, and spices. Spread on a baking sheet and roast for 25-30 minutes.
  3. Cook the black beans if using dried, or simply drain and rinse canned beans.
  4. Sauté the corn in a skillet with olive oil for 5-7 minutes.
  5. Mash the avocado with a fork and add lime juice and salt.
  6. Assemble your bowl with a base of black beans, topped with roasted sweet potatoes, sautéed corn, and mashed avocado. Garnish with cilantro or feta cheese if desired.

Notes

For extra protein, consider adding grilled shrimp or chicken. Adjust spices to your taste and have fun experimenting!
